Ingredients

  • 1 lb. ground beef
  • 1 onion
  • chili powder
  • salt
  • pepper
  • 1 can corn (Niblets)
  • tortilla chips
  • 1 can ripe olives
  • grated Cheddar cheese

Instructions

  1. Brown beef and onion in a skillet.
  2. Add salt, pepper, chili powder, tomato sauce, and corn to the skillet and mix well.
  3. Arrange tortilla chips in the bottom of a flat casserole dish.
  4. Layer the beef mixture over the tortilla chips.
  5. Add a layer of sliced olives.
  6. Sprinkle grated Cheddar cheese over the olives.
  7. Repeat the layers: tortilla chips, beef mixture, olives, cheese.
  8. End with a layer of cheese on top.
  9. Preheat oven to 350°F and bake the casserole for 30 minutes or microwave on High for 6 to 7 minutes.
