Ingredients

  • 1 lb. lean ground beef
  • 1/4 c. chopped onion
  • 1 Tbsp. oil
  • 1 c. whole kernel corn
  • 1 (1 lb.) can tomatoes
  • 2 Tbsp. chili powder
  • 1 tsp. sugar
  • 1 tsp. oregano
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1 1/2 c. grated mild Cheddar cheese
  • 1 (9 1/2 oz.) pkg. corn chips
  • 2 small heads Boston lettuce

Instructions

  1. Brown ground beef and chopped onion in oil in a large skillet, stirring until crumbly.
  2. Pour off drippings.
  3. Stir in corn, tomatoes, chili powder, sugar, oregano, salt, and pepper; bring to a boil.
  4. Simmer, covered, over low heat for 10 minutes.
  5. Stir in 1 cup of cheese and corn chips; cook until cheese is partially melted.
  6. Place shredded lettuce on a serving platter.
  7. Spoon the ground beef mixture over the lettuce.
  8. Sprinkle with remaining 1/2 cup of cheese before serving.
