Ingredients

  • 3 (10 oz.) packages frozen leafy spinach
  • 1 lb. pork butt, cut into 2-inch cubes
  • 1 clove garlic, chopped fine
  • 2 tsp. salt
  • 2 tsp. black pepper
  • 1 (30 oz.) can cooked yams, drained
  • 1/4 cup butter

Instructions

  1. Place half of the frozen spinach in a 9 x 13-inch pan.
  2. Mix pork with chopped garlic and arrange on top of the spinach.
  3. Season with salt and black pepper.
  4. Arrange remaining spinach over the pork pieces.
  5. Cover the pan with foil and bake in a 350°F oven for 1 hour.
  6. Arrange drained yams on top of the baked mixture and dot with butter.
  7. Continue baking for an additional 1 hour.
