- Preheat the oven to 350°F (175°C).
- Butter an 8 or 9-inch glass pie plate or round baking dish.
- Spread the shoestring potatoes evenly over the bottom of the dish.
- Make 4 indentations in the potatoes, each about 1 1/2 inches across, down to the bottom of the dish.
- Carefully crack one egg into each indentation.
- Bake at 350°F for 3 to 10 minutes, then add the shredded Cheddar cheese and chopped parsley.
- Return to the oven and bake until the cheese melts and the eggs are set.
- Cut into 4 wedges and serve immediately.
