Haystack Eggs combine crispy shoestring potatoes with baked eggs topped with melted Cheddar cheese and fresh parsley. Ingredients

  • 1 3/4 oz. can shoestring potatoes
  • 4 eggs
  • 4 oz. shredded Cheddar cheese
  • 6 slices bacon
  • 1 tsp. finely chopped fresh parsley

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Butter an 8 or 9-inch glass pie plate or round baking dish.
  3. Spread the shoestring potatoes evenly over the bottom of the dish.
  4. Make 4 indentations in the potatoes, each about 1 1/2 inches across, down to the bottom of the dish.
  5. Carefully crack one egg into each indentation.
  6. Bake at 350°F for 3 to 10 minutes, then add the shredded Cheddar cheese and chopped parsley.
  7. Return to the oven and bake until the cheese melts and the eggs are set.
  8. Cut into 4 wedges and serve immediately.
