Ingredients

  • 1 lb. white dry Great Northern beans
  • 2 qt. cold water
  • 1 meaty ham hock or 1/2 cup chopped bacon or ham
  • 1/2 teaspoon salt
  • 1 teaspoon black pepper
  • 2 bay leaves
  • 1 medium onion, chopped
  • 1 medium carrot, chopped
  • 1/4 cup chopped celery

Instructions

  1. Wash the beans and place them in a large kettle.
  2. Cover the beans with 2 quarts of cold water and simmer for 3 minutes.
  3. Allow the beans to soak for 1 hour.
  4. Add the ham, salt, pepper, bay leaves, carrot, and celery to the kettle.
  5. Cover and simmer the soup for 3 1/2 hours.
  6. During the last 1/2 hour, add the chopped onion.
  7. Mash the beans slightly and season with additional salt and pepper to taste.
