Ingredients

  • 1/2 cup plus 3 tablespoons unsalted butter
  • 1 1/4 cups sugar
  • 3 eggs, separated
  • 1 teaspoon vanilla extract
  • 1 cup hazelnuts, toasted, peeled, and chopped fine
  • 1 3/4 cups pastry flour
  • 1 tablespoon baking powder
  • Pinch of salt
  • 1/4 cup coffee

Instructions

  1. Have all the ingredients at room temperature, especially the butter and the eggs.
  2. In a mixing bowl, cream the butter and 1 cup of the sugar until very light and fluffy, about 3 to 5 minutes.
  3. Add the egg yolks, one at a time, beating thoroughly after each addition.
  4. Beat in the vanilla extract.
  5. Stir in the toasted, peeled, and chopped hazelnuts.
