Hazelnut Loaf Cake

Ingredients

  • 1 c. plus 2 Tbsp. soft margarine or butter blend
  • 1 c. sugar
  • 1 tsp. vanilla
  • 4 eggs
  • 2 1/4 c. ground hazelnuts
  • 1 2/3 c. self-rising flour
  • 1 tsp. baking powder
  • 1 Tbsp. brandy
  • powdered sugar (for dusting)

Instructions

  1. Grease a 9 1/4 x 5 1/4-inch loaf pan.
  2. Preheat oven to 350°. In large bowl, beat margarine, sugar and vanilla until light and fluffy.
  3. Beat in eggs, one at a time.
  4. Add hazelnuts.
  5. Sift flour and baking powder together.
  6. Fold into mixture; mix thoroughly. Stir in brandy.
  7. Put batter into the greased loaf pan.
  8. Bake 1 to 1 1/4 hours or test with a wooden pick.
  9. Remove from pan and cool. Sift powdered sugar over cooled cake.
