Ingredients

  • 1 cup whole wheat flour
  • 3 to 4 packets Sugar Twin Plus
  • 4 teaspoons baking powder
  • 1 cup yellow cornmeal
  • 1 cup skim milk
  • 1/2 cup low cholesterol egg substitute or 1 egg and 2 whites
  • 1/4 cup nonstick vegetable spray

Instructions

  1. Mix whole wheat flour, Sugar Twin Plus, baking powder, and cornmeal together in a bowl.
  2. Combine skim milk, low cholesterol egg substitute (or 1 egg and 2 whites), and vegetable spray in a separate bowl.
  3. Add the wet ingredients to the dry ingredients and stir until just moistened.
  4. Pour the batter into a 9 x 9 x 2-inch pan sprayed with nonstick vegetable spray.
  5. Bake at 425°F (220°C) for 20 to 25 minutes until golden brown and cooked through.
