Ingredients

  • 2 c. flour
  • 1 Tbsp. baking powder
  • 1/2 tsp. sugar
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 2 1/2 Tbsp. unsalted butter
  • 2 1/2 Tbsp. low-fat farmer cheese
  • 3/4 to 1 c. buttermilk

Instructions

  1. Sift dry ingredients into a large mixing bowl.
  2. Cut in the butter and cheese until the mixture resembles coarse cornmeal.
  3. Make a well in the center and pour in 3/4 cup of buttermilk.
  4. Mix lightly with a fork to form a stiff but workable dough, adding more buttermilk if needed.
