Ingredients
- 6 oz. vegetable oil ⓘ
- 3 lb. fresh raw turkey, skin removed, diced 1/4-inch or smaller ⓘ
- 4 medium garlic cloves, minced ⓘ
- 1 c. green onion, chopped ⓘ
- 1 c. diced red pepper ⓘ
- 1 tsp. black pepper ⓘ
- 5 Tbsp. chili powder ⓘ
- 2 Tbsp. cumin ⓘ
- 1 tsp. oregano ⓘ
- 6 to 8 Tbsp. masa harina ⓘ
- 2 Tbsp. white wine vinegar
- 3 1/2 lb. peeled tomatoes and liquid
- 4 tsp. beef base
- 1 1/2 tsp. dried red chilies, chopped fine ⓘ
- 2 medium whole bay leaves ⓘ
- Kitchen Bouquet or Gravy Master ⓘ
- 1 can tomato juice
Instructions
- In a 1 1/2 to 2-gallon stock pot, heat the vegetable oil over medium-high heat.
- Add the diced turkey and minced garlic; sauté until the meat is firm and slightly browned.
- Add the diced red pepper and chopped green onion; stir and cook until the onion turns clear.
- Reduce heat to medium; stir in black pepper, chili powder, cumin, and oregano; let simmer several minutes to allow the seasonings to permeate.
- Gradually stir in masa harina until the mixture becomes smooth and absorbs excess fat.
- Add white wine vinegar, crushed tomatoes with liquid, beef base, and chopped red chilies; stir thoroughly.
- Add bay leaves and enough Kitchen Bouquet or Gravy Master to darken the mixture to a reddish brown color.
- If needed, add canned tomato juice to reach desired consistency and flavor.
