Ingredients

  • 6 oz. vegetable oil
  • 3 lb. fresh raw turkey, skin removed, diced 1/4-inch or smaller
  • 4 medium garlic cloves, minced
  • 1 c. green onion, chopped
  • 1 c. diced red pepper
  • 1 tsp. black pepper
  • 5 Tbsp. chili powder
  • 2 Tbsp. cumin
  • 1 tsp. oregano
  • 6 to 8 Tbsp. masa harina
  • 2 Tbsp. white wine vinegar
  • 3 1/2 lb. peeled tomatoes and liquid
  • 4 tsp. beef base
  • 1 1/2 tsp. dried red chilies, chopped fine
  • 2 medium whole bay leaves
  • Kitchen Bouquet or Gravy Master
  • 1 can tomato juice

Instructions

  1. In a 1 1/2 to 2-gallon stock pot, heat the vegetable oil over medium-high heat.
  2. Add the diced turkey and minced garlic; sauté until the meat is firm and slightly browned.
  3. Add the diced red pepper and chopped green onion; stir and cook until the onion turns clear.
  4. Reduce heat to medium; stir in black pepper, chili powder, cumin, and oregano; let simmer several minutes to allow the seasonings to permeate.
  5. Gradually stir in masa harina until the mixture becomes smooth and absorbs excess fat.
  6. Add white wine vinegar, crushed tomatoes with liquid, beef base, and chopped red chilies; stir thoroughly.
  7. Add bay leaves and enough Kitchen Bouquet or Gravy Master to darken the mixture to a reddish brown color.
  8. If needed, add canned tomato juice to reach desired consistency and flavor.
