Ingredients

  • 1 lb. favorite, extra wide noodles
  • 6 Tbsp. butter
  • 1 c. zucchini, diced
  • 1 1/2 Tbsp. garlic, minced
  • 2 c. bacon, cooked and crumbled
  • 2 c. heavy whipping cream
  • 1 c. Co-Jack cheese, shredded
  • salt

Instructions

  1. Cook wide noodles until al dente, then drain.
  2. Melt butter in a large, preheated skillet over medium heat.
  3. Saute zucchini, bell pepper, and garlic for 4 minutes.
  4. Add heavy whipping cream, salt, and pepper to the skillet.
  5. Simmer lightly until the sauce reaches a medium thin consistency.
  6. Add cooked noodles to the cream sauce and mix well.
  7. Toss in crumbled bacon and remove from heat.
  8. Stir in shredded Co-Jack cheese until melted.
  9. Serve immediately.
