Ingredients

  • 2 lb. salmon steaks (3/4-inch thick)
  • 2/3 cup thin sliced onion
  • 2 cups sliced mushrooms
  • 1/2 cup chopped tomatoes
  • 1/4 teaspoon chopped green pepper
  • 1/4 cup chopped fresh parsley
  • 1/2 cup dry white wine
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • lemon slices for garnish

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Lightly grease a baking pan.
  3. Place salmon steaks on a bed of sliced onions in the prepared pan.
  4. Combine sliced mushrooms, chopped tomatoes, chopped green pepper, and chopped parsley.
  5. Spread the mushroom and vegetable mixture over the salmon steaks.
  6. Combine dry white wine, lemon juice, salt, and pepper; pour over the vegetables and fish.
  7. Cover the pan with foil.
  8. Bake for 30 minutes, or until the fish flakes easily.
  9. Serve garnished with lemon slices.
