Ingredients

  • 1 cup cooked pumpkin
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • ground ginger
  • ground cinnamon
  • ground nutmeg
  • 1/2 cup chopped pecans, toasted

Instructions

  1. In a bowl, combine cooked pumpkin, sugar, salt, ground ginger, cinnamon, and nutmeg.
  2. Stir in toasted chopped pecans.
  3. Layer gingersnap cookie crumbs in the bottom of a serving dish.
  4. Top with the pumpkin mixture.
  5. Cover with vanilla ice cream.
  6. Freeze until firm and ready to serve.
