Ingredients

  • 2 cups cooked rice
  • 5 slices bacon
  • 4 eggs
  • 4 scallions
  • leftover pork, beef or ham
  • soy sauce

Instructions

  1. Cook the rice a day ahead and allow it to get cold.
  2. Brown the bacon, remove from grease, and crumble.
  3. Add the eggs, rice, and scallions to the bacon grease and scramble until cooked.
  4. Add the leftover meat and soy sauce.
  5. Saute until the rice is browned to your liking.
