Heavenly Spinach combines creamy sour cream, Parmesan, mushrooms, and fresh tomatoes for a flavorful side dish perfect for family dinners or special occasions.

Ingredients

  • 4 (10 oz.) packages frozen spinach
  • 2 Tbsp. butter (oleo or butter)
  • 1/2 cup low-fat mayonnaise
  • 3 tomatoes
  • 1/4 cup butter (oleo or butter)
  • 1/2 lb. sliced mushrooms
  • 1/2 cup low-fat sour cream
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Cook the frozen spinach and drain thoroughly.
  2. Sauté sliced mushrooms in butter until tender.
  3. Combine low-fat sour cream, mayonnaise, and grated Parmesan cheese in a bowl.
  4. Stir in the cooked spinach and sautéed mushrooms. Season with salt and pepper to taste.
  5. Pour the mixture into a greased 9 x 13-inch baking dish.
  6. Slice tomatoes 1/2 inch thick and arrange on top of the spinach mixture.
  7. Sauté bread crumbs in butter until golden brown and sprinkle over the tomatoes.
  8. Bake at 325°F (160°C) for 20 minutes until bubbling and golden.
