Helen Rushton'S Apple Pie
A comforting homemade apple pie with tender tart apples, warm spices, and flaky crust, perfect for family gatherings or cozy dessert occasions.

- Preheat oven to 425°F.
- Combine peeled and sliced tart apples, 1/4 cup sugar, and water in a large saucepan.
- Cook on medium heat until apples soften and become transparent.
- Drain apples, reserving both apples and 3/4 cup of liquid.
- In the same or another saucepan, combine 1 cup plus 2 tablespoons sugar, flour, cinnamon, nutmeg, and vanilla.
- Add the reserved 3/4 cup apple liquid to the mixture.
- Cook on medium heat until the mixture boils and thickens. Add butter and reserved apples.
- Stir until apples are coated with the filling.
- Spoon the filling into the unbaked pie crust.
- Moisten the pastry edge with water.
- Cover with the top crust.
- Fold the top edge under the bottom crust.
- Flute the edges with fingers.
- Cut slits or decorative designs in the top crust to allow steam to escape.
- Cover the pie edges with foil to prevent over-browning.
- Bake at 425°F for 10 minutes.
- Reduce oven temperature to 350°F and bake for an additional 25 minutes or until crust is golden brown.
- Cool the pie to room temperature before serving.
