Ingredients

  • 2 c. coarsely chopped nuts
  • 1 c. whole wheat flour
  • 3/4 c. all-purpose flour
  • 2 c. raisins
  • 1 tsp. soda
  • 1 tsp. salt
  • 1 egg
  • 1 c. buttermilk
  • 2 Tbsp. oil

Instructions

  1. Mix the coarsely chopped nuts, whole wheat flour, all-purpose flour, raisins, soda, and salt in a large bowl with a fork.
  2. In a small bowl, beat the egg slightly with a fork. Blend in the buttermilk and oil.
  3. Stir the wet mixture into the flour mixture just until the flour is moistened.
  4. Pack the batter into a greased loaf pan.
  5. Bake at 350°F (175°C) for 1 hour. Cool before removing from the pan.
