Herb Pinwheel Rolls are soft, flavorful bread rolls filled with sautéed onion and dill, perfect for breakfast, brunch, or as a savory snack for gatherings.

Ingredients

  • 1 pkg. dry yeast
  • 1/4 cup warm water (105~ to 115~F)
  • 1 cup milk, scalded with 1 Tbsp. butter and cooled to lukewarm
  • 1 Tbsp. sugar
  • 1 tsp. salt
  • 3 1/2 cups bread flour
  • 1 medium onion, chopped and sautéed in butter until tender
  • 2 tsp. dried dill weed
  • melted butter

Instructions

  1. Generously grease a large bowl and a 10-inch round baking pan.
  2. Sprinkle yeast over warm water in a large bowl; let stand until proofed and foamy, about 10 minutes.
  3. Stir in the scalded milk, sugar, and salt.
  4. Add 2 cups of flour; beat well.
  5. Add 1 more cup of flour; mix thoroughly.
  6. Turn out onto a lightly floured surface; knead in remaining flour until dough is smooth and satiny, about 10 minutes.
  7. Place the dough in a greased bowl, turning to coat entire surface.
  8. Cover and let rise in a warm area until doubled in size, about 1 1/2 hours.
  9. Punch down the risen dough and roll it out into a rectangle.
  10. Spread sautéed onion evenly over the dough, sprinkle with dried dill weed.
  11. Roll up the dough tightly from one long side to the other, forming a log.
  12. Cut the log into 12 equal slices.
  13. Place the slices in the prepared baking pan, cut side up.
  14. Brush the tops with melted butter.
  15. Bake at 375°F (190°C) for about 20 minutes or until golden brown.
