Ingredients

  • 2 Tbsp. olive oil
  • 1/4 cup fresh orange juice
  • Zest of 1 orange
  • 2 tsp. minced garlic
  • 2 tsp. dried tarragon
  • Salt to taste
  • Coarsely ground black pepper to taste
  • 4 salmon fillets (about 8 oz. with skin on)

Instructions

  1. In a bowl or Ziploc bag, mix the olive oil, orange juice, orange zest, garlic, tarragon, salt, and black pepper to create the marinade.
  2. Place the salmon fillets in the marinade, ensuring they are well coated.
  3. Preheat the oven to 400°F (200°C).
  4. Arrange the marinated salmon fillets on a baking sheet lined with parchment paper or lightly oiled.
  5. Roast the salmon in the oven for about 12-15 minutes, or until cooked through and flaky.
  6. Garnish with freshly snipped chives before serving.
