Bluefish Andalouse

- Preheat oven to 400°F (200°C).
- Spread 1 tablespoon olive oil on the bottom of a baking dish large enough to hold the fillets in one layer. Arrange the boneless bluefish fillets skin side down in the dish.
- If the fillets are large, cut them into 2 or 3 pieces.
- Heat 1 tablespoon olive oil in a saucepan over medium heat and add sliced onion, minced garlic, sliced green pepper, saffron, bay leaf, and thyme.
- Cook, stirring often, for 5 minutes.
- Add chopped tomatoes, red wine vinegar, and chopped parsley to the saucepan.
- Cook for another 10 minutes, stirring occasionally.
- Ladle the sauce over the fish fillets.
- Bring to a boil on top of the stove.
- Place the dish in the oven and bake for 15 minutes.
- Remove from the oven and let stand in the marinade until cool.
- Chill if desired before serving.
