Ingredients

  • 4 medium baking potatoes
  • 8 tsp diet margarine
  • 1 (5 1/3 oz.) can evaporated skim milk
  • 1 tsp snipped chives
  • 1 tsp snipped parsley
  • 1/8 tsp dried sage
  • salt and pepper to taste
  • dash of paprika

Instructions

  1. Preheat oven to 400°F.
  2. Bake potatoes about 45 minutes until tender.
  3. Cut potatoes in half lengthwise.
  4. Scoop out the inside and mash it.
  5. Add diet margarine, evaporated skim milk, snipped chives, snipped parsley, dried sage, salt, and pepper to the mashed potato.
  6. Mix thoroughly.
  7. Spoon the potato mixture back into the potato shells on a baking sheet.
  8. Sprinkle with paprika.
  9. Return to the oven and bake for an additional 10 minutes or until lightly browned.
