Herbed Baked Tomatoes

Herbed baked tomatoes feature ripe tomatoes topped with fresh herbs, seasoned dressing, and crunchy bread crumbs, perfect as a flavorful side or light vegetarian main dish.

Ingredients

  • 8 large vine ripened tomatoes
  • 2 tsp. red wine vinegar
  • 1/2 tsp. whole grain mustard
  • 1 clove garlic
  • 2 tsp. fresh basil
  • 2 tsp. fresh parsley
  • 2 tsp. fresh chives
  • 1/2 c. white bread crumbs
  • salt and pepper

Instructions

  1. Thickly slice the tomatoes and layer half of them in an ovenproof baking dish.
  2. Mix red wine vinegar, whole grain mustard, and crushed garlic together, stirring in 2 teaspoons of cold water.
  3. Sprinkle the tomatoes with half of the chopped fresh herbs and drizzle with half of the dressing.
  4. Layer the remaining tomato slices on top, overlapping them, and drizzle with the remaining dressing.
  5. Sprinkle the white bread crumbs over the top of the tomatoes.
  6. Bake in a preheated oven at 400°F for 25 minutes or until the top is golden brown.
  7. Remove from the oven and sprinkle with the remaining herbs.
  8. Serve immediately.
