Ingredients

  • 1/2 cup oleo (1 stick)
  • 1/2 teaspoon salt
  • 1 cup all-purpose flour
  • 1/4 teaspoon cayenne pepper
  • 4 large eggs
  • 1 cup grated Gruyère cheese
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh oregano
  • 1 teaspoon chopped fresh sage

Instructions

  1. In a medium saucepan, combine 1 cup water, butter, and salt. Bring to a boil, then remove from heat.
  2. Add flour and cayenne pepper all at once and beat vigorously with a wooden spoon until dough is smooth.
  3. Return to low heat and stir continuously for 5 minutes or until the mixture pulls away from the sides and forms a ball.
  4. Transfer the dough to a mixing bowl and let it cool slightly.
  5. Add eggs one at a time, beating well after each addition until the mixture is smooth and glossy.
  6. Stir in grated cheese, chopped thyme, oregano, and sage until evenly incorporated.
  7. Drop spoonfuls of batter onto a baking sheet lined with parchment paper.
  8. Bake in a preheated oven at 375°F (190°C) for about 15-20 minutes, or until puffed and golden.
