Ingredients

  • 1/2 cup butter or margarine (softened)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon chopped fresh parsley or 1 teaspoon dried parsley
  • 1 teaspoon dried rosemary
  • 6 ears fresh shucked corn-on-the-cob or frozen corn-on-the-cob

Instructions

  1. Preheat oven to 375°F.
  2. Combine butter, salt, pepper, parsley, and rosemary in a small bowl.
  3. Mix well to create the herb butter mixture.
  4. Cut six 12-inch pieces of heavy-duty foil.
  5. Spread approximately 1 tablespoon of the butter mixture onto each ear of corn, reserving the remaining butter mixture.
  6. Place one ear of corn diagonally on each piece of foil.
  7. Roll up each foil package tightly around the corn.
  8. Twist the ends of the foil to seal securely.
  9. Place the wrapped corn on a baking sheet.
  10. Bake for 30 minutes.
  11. Untwist the ends of the foil and unroll the packages.
  12. Optional: fold the edges of foil up around each ear of corn to form a 'boat'.
  13. Top each ear of corn with a small amount of the remaining butter mixture before serving.
