Ingredients

  • 1 Tbsp. paprika
  • 1 tsp. paprika
  • 1/2 tsp. garlic powder
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 tsp. dried whole thyme
  • 1/2 tsp. dried whole oregano
  • 1/8 tsp. ground red pepper
  • 10 (4 oz.) catfish fillets

Instructions

  1. Combine paprika, garlic powder, salt, black pepper, dried thyme, dried oregano, and ground red pepper in a small bowl.
  2. Sprinkle the spice mixture evenly on both sides of each catfish fillet.
  3. Place the fillets in a grilling basket coated with vegetable cooking spray.
  4. Coat the grill rack with vegetable cooking spray.
  5. Place the basket on the grill rack.
  6. Grill, covered, for 4 minutes on each side or until the fish flakes easily with a fork.
  7. Transfer the grilled catfish to a serving platter.
  8. If desired, garnish with additional oregano and thyme before serving.
