Ingredients

  • 4 to 5 lb boneless pork loin
  • 3 to 4 cloves fresh garlic
  • 5 to 6 Tbsp dried oregano
  • salt and pepper

Instructions

  1. Peel garlic and cut each clove into 3 or 4 slivers.
  2. Make incisions at random on the fat side of the loin large enough to insert the garlic slivers.
  3. Pat dried oregano onto all surfaces and ends of the roast.
  4. Place the roast on a rack in a shallow roasting pan.
  5. Insert a meat thermometer into the center of the roast, avoiding the fat.
  6. Roast at 325°F until the thermometer reaches 170°F.
  7. Remove from oven and let rest for at least 10 minutes.
  8. Slice and serve garnished with fresh parsley.
