Ingredients

  • 0.5 lb fresh ground pork
  • 2 cups water
  • 0.75 cups corn meal
  • 1 teaspoon salt
  • 1 teaspoon onion juice
  • 2 tablespoons minced parsley or cilantro

Instructions

  1. Fry the ground pork lightly in a skillet.
  2. Heat water to boiling in a saucepan.
  3. Stir in the cornmeal gradually into the boiling water.
  4. Add the cooked pork, salt, onion juice, and parsley or cilantro to the mixture.
  5. Cook over low heat, stirring constantly, until very thick.
  6. Transfer the thickened mixture into a 3 x 7-inch loaf pan and let it chill for several hours or overnight.
  7. Cover the loaf with wax paper to prevent crust formation.
  8. Once chilled, cut into thin slices.
  9. Dip the slices in flour, beaten egg, and crumbs.
  10. Fry the slices in about 2 tablespoons of Crisco until golden brown.
