Ingredients

  • 2 Tbsp bacon drippings or vegetable shortening
  • 1 medium onion, finely chopped
  • 1 head red cabbage, cut into small pieces
  • 3 tart apples, unpeeled, cored, and cut into 2-inch pieces
  • 1 Tbsp lemon juice
  • 1 1/2 Tbsp sugar
  • 1/2 tsp salt

Instructions

  1. Heat the bacon drippings or vegetable shortening in a 12-inch cast-iron Dutch oven over medium heat on the stove top, fire, or hot coals.
  2. Add the chopped onion and cabbage, then cook, covered, over enough heat to steam the cabbage for 25 to 30 minutes, or until tender, stirring occasionally to prevent browning.
  3. Stir in the unpeeled, cored, and cut apples along with lemon juice, sugar, and salt.
  4. Cover and continue cooking over low heat for another 25 to 30 minutes, stirring occasionally, until the apples are soft and cooked down.
