Ingredients

  • 4 lean pork chops (1 to 1 1/2 inches thick)
  • 2 Tbsp. tamari
  • 1 tsp. cornstarch or flour
  • 1 clove garlic, minced
  • 1/2 tsp. rosemary, thyme, tarragon, oregano, sage and basil
  • salt and freshly ground black pepper to taste

Instructions

  1. Trim all visible fat. Puncture the chops with the tines of a fork at intervals of about 1/4 inch. Rub well with the cornstarch or flour. Place the tamari, herbs, garlic and pepper in a shallow bowl; marinate the chops for at least 2 hours (preferably overnight). Be sure the chops are coated on both sides with the marinade and turn 2 or 3 times. This marinade is an excellent tenderizer.
