Ingredients

  • 3 raw potatoes
  • 3 raw carrots
  • 1 large onion
  • 2 cups cracker crumbs
  • 4 eggs
  • salt to taste
  • pepper to taste

Instructions

  1. Grind or process the potatoes, carrots, and onion until finely chopped.
  2. Mix all ingredients together: ground vegetables, cracker crumbs, eggs, salt, pepper, and hamburger until well combined.
  3. Form the mixture into large, firm balls using an ice cream scoop for uniformity.
  4. Fry the meatballs in a limited amount of Crisco until they are nicely browned.
  5. Place the browned meatballs in a deep baking dish.
  6. Cover the meatballs with tomato juice.
  7. Bake in a preheated oven at 350°F (175°C) for 1 hour.
