Ingredients

  • 12 oz. ground raw turkey
  • 1 c. sliced onions
  • 2 c. chopped fresh tomatoes
  • 2 c. tomato juice
  • 1 c. long grain rice
  • 2 tsp. chili powder
  • 1 Tbsp. chopped fresh oregano

Instructions

  1. Place turkey and sliced onions in a nonstick, microwave-safe casserole dish. Cover and microwave on High for 5 minutes, stirring once.
  2. Drain the mixture.
  3. Stir in chopped fresh tomatoes, tomato juice, rice, chili powder, and chopped fresh oregano.
  4. Cover with vented plastic wrap and microwave on High for 8 minutes or until rice is tender.
  5. Let stand for 5 minutes before serving.
  6. Garnish with a sprig of fresh oregano if desired.
