- In a saucepan, melt the butter.
- Add the chopped celery and cook until tender.
- Stir in the dried oregano leaves, salt, garlic powder, and pepper.
- Cut the potatoes almost all the way through into 1/2-inch slices.
- Place each potato on a piece of foil large enough to wrap it securely.
- Drizzle about half of the margarine mixture into the slits of each potato.
- Insert a half slice of onion into each slit.
- Drizzle the remaining margarine over the potatoes.
- Bring the edges of the foil together and seal securely with double foil.
- Grill over hot coals for 40 to 50 minutes until potatoes are tender.
