Herley Grilled Potatoes feature tender slices of potatoes filled with onion and seasoned butter, perfect for outdoor grilling and flavorful side dishes for summer barbecues.

Ingredients

  • 3/4 cup margarine or butter
  • 1/4 cup finely chopped celery
  • 1 teaspoon dried oregano leaves, crushed
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon pepper
  • 6 medium potatoes
  • 2 medium onions, thinly sliced and cut in half crosswise

Instructions

  1. In a saucepan, melt the butter.
  2. Add the chopped celery and cook until tender.
  3. Stir in the dried oregano leaves, salt, garlic powder, and pepper.
  4. Cut the potatoes almost all the way through into 1/2-inch slices.
  5. Place each potato on a piece of foil large enough to wrap it securely.
  6. Drizzle about half of the margarine mixture into the slits of each potato.
  7. Insert a half slice of onion into each slit.
  8. Drizzle the remaining margarine over the potatoes.
  9. Bring the edges of the foil together and seal securely with double foil.
  10. Grill over hot coals for 40 to 50 minutes until potatoes are tender.
