Ingredients

  • 1 1/2 cups dry beans
  • 1 pound ham pieces
  • 1 garlic clove
  • 1 large chopped onion
  • 1 large can tomatoes
  • Juice of 1 lemon
  • Salt to taste
  • Pepper to taste

Instructions

  1. Wash the dry beans and cover them with water for 3 hours or overnight.
  2. Drain the beans and add them to 2 quarts of fresh water in a pot.
  3. Add all other ingredients: ham pieces, garlic clove, chopped onion, canned tomatoes, lemon juice, chopped green or red pepper, salt, and pepper.
  4. Cook the mixture all day or for at least 4 hours until flavors meld and beans are tender.
  5. Serve hot, ideally with fried corn bread.
