Ingredients

  • 2 1/2 c. leftover coffee
  • 4 tsp. baking soda
  • 2 c. raisins
  • 1 c. white sugar
  • 1 1/2 c. chopped nuts
  • 4 c. sifted flour
  • 1/4 tsp. salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the leftover coffee, baking soda, raisins, sugar, chopped nuts, sifted flour, and salt.
  3. Mix until well combined.
  4. Pour the batter into three greased coffee cans.
  5. Bake in the preheated oven for about 60 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow to cool before removing from cans.
