- Have the butcher clean the hog's head.
- Boil the head in water to cover until the meat falls off the bones.
- Mince the hog's head meat finely, removing all small bones.
- Take the water the head was boiled in and add it to the minced meat until the consistency is like thin pudding.
- Season with vinegar, hot pepper, onion, and salt.
- Pour the mixture into molds.
- Allow it to harden into a jelly which can be sliced and served.
