Ingredients

  • 3 egg yolks
  • 6 Tbsp. butter
  • 2 Tbsp. lemon juice
  • 1/4 c. boiling water
  • 1/2 tsp. salt

Instructions

  1. In the top of a double boiler, heat the beaten egg yolks.
  2. Gradually add butter, one tablespoon at a time, stirring constantly.
  3. Cook over hot water, not boiling, until the mixture thickens.
  4. Gradually add boiling water and lemon juice while stirring.
  5. Add salt and serve with fish or other dishes.
