- Begin by frying the tortillas. Heat olive oil and butter in a large saucepan over medium-high heat. Add tortilla strips. Cook for 5-6 minutes until tortillas are brown and crispy. Remove from pan and allow to drain over paper towels.
- Meanwhile, turn heat on pan to medium. If necessary, add additional olive oil. Add bell pepper and jalapeno to the pan and cook for a few minutes. Add salsa and cook until heated through.
- While peppers are cooking, beat eggs in a small bowl. Once peppers have cooked, add eggs to the sauce pan. Scramble eggs with the peppers by gently pushing them around the pan until cooked.
- Once the eggs have cooked through, add cheese and crumble the tortillas strips into the eggs. Serve immediately with desired garnishes.
