  • 1 1/2 tsp. liquid smoke
  • 3 Tbsp. cube salt or Morton Tender Quick
  • 1/8 tsp. mustard seed
  • 1/4 tsp. garlic powder
  • 2 Tbsp. sugar
  • 1 c. water

Instructions

  1. Mix all ingredients well.
  2. Roll the mixture into 2 or 3 firmly packed rolls.
  3. Wrap each roll tightly in aluminum foil with the shiny side facing the meat, seam side up.
  4. Place the wrapped rolls in the refrigerator for 24 hours.
  5. Punch holes in the bottom of the rolls.
  6. Place the rolls on a rack in a pan and bake at 325°F for 1 1/2 hours.
  7. Chill before slicing and serving.
