Ingredients

  • 1 small onion, chopped
  • 1 clove garlic, chopped
  • 1 slice tomato, chopped
  • 1/4 c. Mazola oil
  • 1/4 c. green pepper, chopped
  • 1 c. rice
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 2 1/2 c. water
  • 1 carrot, finely chopped
  • 1 cube chicken bouillon

Instructions

  1. Put oil in 2-quart pot. Add all other ingredients, except water. Saute, then add water. Stir until boiling; put lid on. Turn burner to medium and cook for 20 minutes. (Do not stir.) After done, crack lid and let stand for 5 minutes before serving.
