Ingredients

  • beef steak cubes
  • 1 bell pepper
  • 1 onion
  • 2 cups Minute rice
  • 1 pound Velveeta cheese
  • 1 can Ro-Tel tomatoes

Instructions

  1. Brown the beef steak cubes, bell pepper, and onion in a skillet.
  2. Melt the Velveeta cheese and Ro-Tel tomatoes in a pan over medium heat.
  3. Stir the melted cheese mixture into the beef and vegetables in the skillet.
  4. Add the uncooked Minute rice to the skillet.
  5. Simmer over low heat until the rice is cooked, stirring occasionally.
