Ingredients

  • 1 1/2 c. flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 c. shortening
  • 1 c. sugar
  • 1 egg
  • 1/2 c. milk
  • 1/3 c. currants

Instructions

  1. Cream shortening, sugar, and unbeaten egg until well blended.
  2. Sift together the dry ingredients: flour, baking powder, and salt.
  3. Add the sifted dry ingredients alternately with milk to the creamed mixture, beating well after each addition.
  4. Pour the batter into a greased loaf tin.
  5. Mix currants with cinnamon and sugar, then spread over the top of the batter.
  6. Optionally, fold some currants into the batter before baking.
  7. Bake in a moderate oven for 25 minutes or until done.
