Ingredients

  • 2 1/2 cups cake flour
  • 3/4 tablespoon salt
  • 2 1/2 tablespoons baking powder
  • 1 1/2 tablespoons baking soda
  • 3/4 cup butter flavored vegetable shortening
  • 1 tablespoon frozen orange juice concentrate
  • 1 tablespoon grated orange rind
  • 1/2 teaspoon vanilla
  • 1 cup milk
  • 3 eggs
  • 1 cup coconut

Instructions

  1. Sift together the cake flour, salt, baking powder, and baking soda.
  2. Blend and add the shortening, orange juice concentrate, grated orange rind, and vanilla to the dry ingredients.
  3. Add milk; beat with electric mixer for 3 minutes.
  4. Add eggs; beat for an additional 2 minutes.
  5. Stir in the coconut.
  6. Pour batter into two 9-inch pans or a 9 x 13-inch pan lined with waxed paper.
  7. Bake at 350°F for 30 to 35 minutes.
