Ingredients

  • 6 Tbsp. pineapple juice
  • 6 Tbsp. flour
  • 1 c. sugar
  • 2 (20 oz.) cans chunk pineapple, well drained
  • 2 c. grated Cheddar cheese
  • 1/2 c. butter
  • 1 c. Ritz crackers

Instructions

  1. Mix pineapple juice, flour, and sugar together; add drained pineapple chunks and grated Cheddar cheese.
  2. Pour mixture into a greased casserole dish.
  3. Melt butter and combine with Ritz crackers rolled into crumbs.
  4. Sprinkle cracker crumbs on top of the casserole.
  5. Bake in a 350°F oven for 40 to 45 minutes until bubbly and golden.
