Ingredients

  • 2 c. brown rice
  • 3 1/2 to 4 c. boiling water
  • 1 tsp. salt
  • 1 Tbsp. yeast flakes
  • 1 large tomato, chopped
  • 1 cucumber, chopped
  • 1 c. green onion, chopped
  • 1 small green pepper, chopped
  • 1 avocado, diced

Instructions

  1. Place rice, water, salt and yeast flakes in flat baking dish. Cover with
  2. wax
  3. paper
  4. and
  5. foil.
  6. Bake
  7. at 350° for 1 hour. Remove
  8. from
  9. oven
  10. and top with remaining ingredients. Garnish with toasted sesame or sunflower seeds and GARLIC HERB DRESSING. Serves 6 to 8.
