Ingredients

  • 1 cup chopped onion
  • 1/3 cup butter
  • 2 pounds frozen hash browns
  • 1 can mushroom soup
  • 1 1/2 cups sour cream
  • 1/4 cup mayonnaise

Instructions

  1. Saute chopped onion in butter until translucent.
  2. Combine the cooked onion and melted butter with frozen hash browns in a large bowl.
  3. In a separate bowl, mix mushroom soup, sour cream, and mayonnaise until smooth.
  4. Add the mushroom soup mixture to the potato mixture; season with salt and pepper to taste.
  5. Spread the mixture into a 9 x 13-inch baking pan.
  6. Top with crushed Rice Krispies tossed with melted butter.
  7. Bake in a 325°F oven for 1 hour until golden and bubbly.
