Ingredients

  • 2 qt. chicken broth
  • 1 large onion
  • 1 can pureed tomatoes
  • black pepper
  • ground cayenne pepper
  • sliced lemon
  • salt

Instructions

  1. Slice a large onion and boil in chicken broth until tender.
  2. Strain out the onion and discard it.
  3. Return the broth to heat.
  4. Add one (or more) can of pureed tomatoes.
  5. Stir the mixture well.
  6. Season with black pepper and ground cayenne pepper to taste.
  7. Simmer the soup.
  8. Pour into cups and serve over a slice of lemon.
  9. Optional: Drop strips of corn tortillas into the soup before serving.
