Hot Tortilla Casserole

Ingredients

  • 2 bags tortilla chips
  • 2 cans chili
  • 2 cans tamales
  • 1 can refried beans
  • 2 bottles Tennessee Sunshine
  • 1 small bottle Texas Pete
  • 1 bag shredded Cheddar cheese

Instructions

  1. Preheat oven to 375°F.
  2. Spray a 9 x 13-inch dish with cooking spray (Pam).
  3. Crunch tortilla chips and cover the bottom of the dish with a layer of chips.
  4. Open the cans of tamales and save some of their juice.
  5. Lay tamales in the dish over the chips.
  6. Sprinkle shredded Cheddar cheese over the tamales and add Texas Pete hot sauce to taste.
  7. In a separate bowl, mix chili and refried beans with one bottle of Tennessee Sunshine.
  8. Add the juice from the tamales to the chili mixture and stir well.
  9. Spread the chili mixture over the tamales in the dish.
  10. Cover the dish tightly with foil or a lid.
  11. Add another layer of crushed tortilla chips over the chili mixture.
  12. Spread the remaining shredded Cheddar cheese on top.
  13. Pour the last bottle of Tennessee Sunshine over the top.
  14. Bake in the preheated oven for 45 minutes, or until bubbling around the sides.
