A creamy, flavorful Middle Eastern chickpea dip with tahini, garlic, lemon, and herbs, perfect for spreading or dipping at gatherings or casual snacking.

Ingredients

  • 1 to 2 cloves garlic
  • 1/4 cup water
  • 2 tablespoons lemon juice
  • 1 tablespoon olive or vegetable oil
  • 1/2 teaspoon salt
  • 1 can drained chickpeas
  • 1/4 cup tahini
  • chopped parsley or mint

Instructions

  1. Blend garlic, water, lemon juice, oil, and salt in a blender.
  2. Add chickpeas and blend until smooth.
  3. Add tahini and blend; the mixture should have the consistency of thick mayonnaise.
  4. If too thick, add a little water.
  5. Garnish with chopped parsley or mint leaves and serve with pita bread wedges.
