Ingredients

  • 3 medium peeled Russet potatoes
  • 1 large onion
  • 1/2 lb bacon
  • salt
  • pepper
  • water

Instructions

  1. Slice the peeled Russet potatoes into 1/4-inch thick slices.
  2. Chop the large onion.
  3. Place the sliced potatoes and chopped onion into a large pot and fill with water to cover.
  4. Cook until the potatoes and onions are tender.
  5. Dice the bacon and fry until desired doneness.
  6. Add the cooked bacon and its grease into the pot with the potato and onion mixture.
  7. Mix lightly to combine, taking care not to mush the potatoes.
  8. Serve with catsup.
