Ingredients

  • 2 cups flour
  • 1/2 cup powdered sugar
  • 2 sticks butter
  • 1/4 teaspoon salt
  • 4 eggs
  • 1 cup granulated sugar
  • 2 small lemons
  • 1 cup sugar

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixer, blend together 2 cups of flour, 1/2 cup of powdered sugar, 2 sticks of butter, and 1/4 teaspoon of salt until well combined.
  3. Press the mixture evenly into a 9 x 13-inch pan to form the crust.
  4. Bake in the preheated oven for 20 minutes or until lightly golden.
  5. While the crust is baking, juice the two small lemons and remove seeds.
  6. In a bowl, beat 4 eggs with 1 cup of granulated sugar until smooth.
  7. Add the lemon juice and 1 cup of sugar to the egg mixture, stirring well.
  8. Pour the lemon filling over the baked crust.
  9. Return the pan to the oven and bake for an additional 20 minutes or until the filling is set.
  10. Allow to cool before cutting into squares and serving.
